Easy Thermomix Tzatziki Dip

- 320 g cucumber
- 8 g fresh dill or mint
- 2 cloves garlic
- 250 g Greek style yogurt I used Greek soy yogurt
- 1.5 tablespoon olive oil light or extra virgin
- 1 tablespoon lemon juice
- salt & pepper to taste

- olive oil to taste
- fresh dill to taste
Place cucumber in your Thermomix bowl. Chop 5 seconds / Speed 5.
320 g cucumber
Remove cucumber from TM bowl and place into a sieve to drain excess water.
Add herbs and garlic to a TM bowl. Chop for 4 seconds / Speed 5 (or longer if desired). Scrape down the sides of the bowl.
8 g fresh dill, 2 cloves garlic
Add the remaining ingredients. Mix for 4 seconds / Reverse / Speed 3.
250 g Greek style yogurt, 1.5 tablespoon olive oil, 1 tablespoon lemon juice, salt & pepper
Transfer to a serving bowl and add a drizzle of olive oil. Sprinkle more chopped dill on top.

- Tip 1 - Taste and adjust - You might prefer more/less garlic, salt, pepper, etc.
- Tip 2 - Add more or fewer cloves of garlic depending on your preference.
- Tip 3 - Don't forget to dab the cucumber with a kitchen or paper towels to remove excess water.
- Tip 4 - If you don't eat/like garlic, simply omit it.
- Tip 5 - You can use dry dill instead of fresh. Don't use more than ⅓ of the fresh amount (the flavor is a lot more concentrated!)
To store - Transfer to an airtight container straight away. Seal well & keep in the fridge for up to 3 days. Don't freeze.
