Add sliced peaches, 1 cup (235ml) of water & sugar to a saucepan.
2 peaches, 2 tablespoon brown sugar
Bring to boil, lower the heat and let simmer for 10 minutes.
Once the peaches have softened, remove them from heat.
Blend until smooth. Pour the syrup through a sieve into a bowl.
Use a fork to squish out any remaining liquid stuck to the sieve.
Milk Tea
In a mug, combine1 cup (235ml) of boiling water with tea. Steep for 5 minutes, then set aside to cool.
1 bag tea
Add tapioca pearls to a pan full of boiling hot water.
½ cup quick-cooking tapioca pearls
Let simmer for about 5-6 minutes. If you want the pearls to be softer, cook them for longer. If you want them chewier, cook them for less long.
Remove from heat and strain through a sieve. If you don't have a sieve, simply scoop out the balls with a spoon.
Immediately soak them in half of the peach syrup. Stir & set aside.
To serve, ensure the peach syrup & tea have cooled down.
Divide tapioca balls between 2 glasses. Fill the glasses with ice. Then add tea, milk, and the remaining peach syrup.
1 cup milk of choice, plenty of ice
Notes
Important: Always taste before serving. Adjust the sweetness to your own personal taste. Everyone enjoys their boba differently!
Don't worry if the drink separates a little. Just stir it with a straw before sipping.
Use herbal teas or decaf black tea for a caffeine-free version.
Serve it immediately - don't let it stand at room temperature for too long.
When making boba pearls, follow the instructions on the packaging. While I do provide general instructions, they might vary slightly by brand!
Use a liquid sweetener like maple syrup, agave syrup, or honey if desired.
Instead of tapioca pearls, you can use coconut jelly, aloe vera jelly, popping boba pearls, etc.
To store - Place milk tea (with no pearls and no ice) in an airtight jar in the fridge for up to 48 hours. Add fresh pearls and ice when you're ready to serve it.
