Thermomix Guacamole (Avocado Dip)

Ingredients

  • ½ onion red or white
  • 1 cup coriander / cilantro leaves & stalks
  • 2 avocados ripe
  • 1 tomato large, ripe
  • 2 tablespoon lime juice freshly squeezed
  • ¼ teaspoon salt more to taste
  • ¼ teaspoon black pepper more to taste

Instructions

  • Add onion & cilantro/coriander to the TM bowl. Chop for 3 seconds / speed 6.
  • Then add all the remaining ingredients and mix for 5-10 seconds/speed 5.
  • Do NOT mix for too long or your guacamole will become too mushy and soft.
  • Taste and adjust. Then serve!

Notes

Tip 1 - Remember – guacamole should be a chunky dip, so don’t blend it too long!
Tip 2 - Before serving, taste and adjust guac to your taste. Add more salt, pepper, spices, or herbs.
Tip 3 - Use RIPE avocadoes.
To store: Spoon it into an airtight container. Slowly pour about 1 cm of cold water on top. Store for up to 2 days. Remove the extra water before serving.
To freeze: Spoon it into an airtight & freezer-safe container. Place it in the freezer for up to 1 month.
To make WITHOUT Thermomix. Add avocados to a medium-sized bowl and mash with a fork. Chop or blend onion, cilantro, and tomato into small pieces and add to the avocado bowl. Then add lime juice, salt & pepper. Stir well until combined. Taste and adjust.
