Assemble ingredients. Add all the ingredients to a large mixing bowl.
2 cups rolled oats, 2 cups almond milk, ½ peach, 1 lemon, 2 teaspoon pumpkin pie spice, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, ¼ cup maple syrup, 2 tablespoon chia seeds
Mix well. Stir everything until well combined and evenly distributed throughout.
Divide and let stand. Divide the mixture between 3-4 mason jars or cups. Cover them and refrigerate overnight (or for at least 5 hours).
Add toppings and serve. Don't skip the toppings - they add extra flavor and crunch. Start with a layer of chopped peach. Then add whipped coconut cream or yogurt, and granola or toasted seeds for crunchiness.
