Pulse the mixture until it reaches a crumb consistency. It shouldn't be completely smooth or powdery.
Line your baking sheet with parchment paper (for easier cleaning). Spread your breadcrumb mixture out in an even layer.
Pop your breadcrumbs into a preheated oven at 350°F (175°C). Bake for around 10-12 minutes* or until they turn a gorgeous golden brown color (see photos for reference). Remember to stir the mixture about halfway through!
Keep an eye on them—they can go from fab to burnt quickly!

*Baking time will vary depending on how stale your bread is.Don't have a food processor? No worries! Place the toasted bread chunks into a sealable freezer bag. Seal the bag tightly and crush the chunks with a rolling pin or another heavy object until you reach a crumb-like texture.Tip 1 - Experiment with different types of bread for your breadcrumbs—such as whole wheat, sourdough, or even multigrain. Tip 2 - Za'atar Zest: If you're a fan of all things zesty, add a pinch of lemon or orange zest to your za'atar mix. Tip 3 - Spice it up: I deliberately kept this recipe simple. However, there's no reason why you shouldn't play around with additional seasoning. I like adding black pepper, garlic powder, or red chili flakes.Serving - Toss onto your favorite salad, sprinkle on pasta or grain bowls, add to a roasted vegetable medley, or just snack them on their own! Storing - Keep in an airtight container at room temperature. Consume within one week.
