Xanthan Gum - Will serve as our low-carb thickener and keto substitute for flour or cornstarch.
Butter - I used a dairy-free butter spread by Vitalite. You can use any type of butter you want - both spreads or blocks of butter work well.
Herbs - This is completely optional. I used a mix of dry parsley, chives & thyme.

In stores, you can find it either in the baking aisle or in the section devoted to special dietary requirements (usually gluten-free or vegan sections).
The best thing about it is that a little goes a long way.

- THICKER - If you prefer a thicker gravy, add more xanthan gum.
- THINNER - Add less if you prefer a thinner texture.
- HERBS - Don't like the herbs? Sub them out for other herbs or leave them out altogether.
- TOO THICK - When the gravy sits for a while, it becomes thicker. Simply thin it out with more hot water or broth, then mix well.
- TOO SALTY - If it's too salty, just stir in more hot water.
- NO BITS - If you prefer a gravy with no bits of herbs, just pour it through a fine-mesh sieve before serving.

TO STORE - Make sure it reaches room temperature then transfer it to an airtight container. Keep in the fridge and eat within 2 days.
Remember it will thicken in the fridge so you'll need to thin it out with more hot water or stock. Give it a good stir, heat it up & you're good to go.
TO FREEZE - Place in an airtight container. Keep for up to 2 months.
When you're ready to serve it, let it thaw at room temperature. You might have to thicken it again with some more xanthan gum.
