My easy vegan bliss balls are made with just 4 ingredients! Packed with sweet dates & peanut butter, they're my go-to gluten-free snack. It feels like eating raw cookie dough, but then lighter in calories and with no added sugars!

Ingredient Notes
- Peanut butter: Works best with 'natural' peanut butter which means no added salt, sugar, or oil.
- Dates: I used Medjool dates, but you can use any other type!
In terms of the equipment, you will need a food processor (or a high-speed blender).

1 & 2 - Soak your dates in boiling hot water. The longer the better, but 20 minutes should do.
3 - Drain the dates and add them to your food processor. Then add cocoa powder and peanut butter.
4 - Blend or pulse until your ingredients form a sticky mixture. No need to blend until completely smooth.
5 - Transfer the mixture to a sheet of baking paper and use your hands to form small balls.
6 - Finally, roll each bliss balls separately in the chopped cashew nuts.

Expert Tips
- Don't blend all the ingredients until completely smooth. Instead, just pulse (turn the food processor on and off repeatedly) until you get a rough dough. This way, you will still be left with a good bite and plenty of texture.
- Food processor or blender? While you can technically use a high-speed blender for these, I recommend using a food processor (even a mini one like mine will do!) Most regular blenders won’t work because they require liquid to be added to your mixture.
- Always store in an airtight container. You will need to transfer these to an airtight container and store them at room temperature.
- Making them for a big fancy occasion? Roll them in dried rose petals for that WOW factor! Then serve them in mini muffin liners.
FAQs
You might have added too many dates! The way to fix this would be to simply just add some more cocoa powder to help dry out your mixture.
You will need to do exactly the opposite - add more dates. They act as a glue in this recipe, helping all the other ingredients stick together, while also making sure your cashews stay attached.
Weight them. Grab your kitchen scales and weigh out your mixture before rolling it into a ball. This will ensure they’re all sized exactly the same. If you don't have weighing scales, simply use a measuring cup.

Here's how you can substitute each of these ingredients.
Dates - I splurged on Medjool dates for a maximum flavour, but you don't have to use those. Simply grab whatever dates you have available.
Cashews - Can be substituted for other nuts such as peanuts, brazil nuts, almonds, pecans, etc.
Peanut butter - You can easily use cashew or almond butter instead.

- 1 cup dates 150 grams
- ¼ cup (0.25 cup) cocoa powder
- ⅛ cup (0.13 cup) peanut butter
- ¼ cup (0.25 cup) cashews 25 grams
