After so much positive feedback following my Thermomix hummus & Thermomix baba ganoush recipes, I thought I'd whip up another delicious dip!

Ingredients
You won't need much to make this recipe.
In fact, you might already have these ingredients in your fridge/pantry.

Ingredient Details
Olive oil - Use either light olive or extra virign olive oil.
Lemon juice - I recommend freshly squeezed juice - not oncentrate. However, if that's all you have, concentrated lemon juice is fine too.
Garlic - Adds tons of flavor. If you're not a fan, use a little bit less or skip altogether.
Cucumber - The star of every tzatziki recipe. Lebanese or English cucumbers are best as they have less seeds. The crunchier & firmer, the better!
Yogurt - I chose soy yogurt to keep this dairy-free. Any Greek-style yogurt will work.
Herbs - I used fresh dill, but you can also use mint instead.

- Sieve to drain excess cucumber water
- A bowl for serving
Steps
Hint - This is just a quick overview. Read the exact measurements & instructions at the bottom!

- Place cucumber in your Thermomix bowl. Chop 5 seconds / Speed 5
- Remove cucumber from TM bowl and place into a sieve to drain excess water.
- Add herbs and garlic to a TM bowl. Chop for 4 seconds / Speed 5 (or longer if desired). Scrape down the sides of the bowl
- Add the remaining ingredients. Mix for 4 seconds / Reverse / Speed 3.
- Transfer to a serving bowl and add a drizzle of olive oil. Sprinkle more chopped dill on top.
Top Tips
- Taste and adjust - You might prefer more/less garlic, salt, pepper, etc. Before serving, give it a taste & adjust accordingly.
- You can add more or fewer cloves of garlic depending on your preference.
- Don't forget to dab the cucumber with a kitchen or paper towels to remove excess water.
- If you don't eat/like garlic, simply omit it.
- You can use dry dill instead of fresh. Don't use more than ⅓ of the fresh amount (the flavor is a lot more concentrated!)
Green tip - Don't throw away the leftover cucumber water! Transfer it to a large glass, and add some ice cubes, fresh mint & a squeeze of lemon. You've got yourself a lovely refreshing drink!
FAQ

No, don't freeze it. Tzatziki is not freezer-friendly. The cucumber will turn mushy and the lemon might curdle.
Yes! Make sure you're using yogurt that's packed with probiotics - they are what makes tzatziki good for your gut health (Source).
Substitutions
Don’t have a certain ingredient?
- Cucumber - use grated zucchini instead.
- Lemon juice - use white wine vinegar.
- Garlic - simply omit.
- Olive oil - omit or use other oil like sunflower, rapeseed, etc.
- Dill - use other herbs like mint, chives, or cilantro. You can also use a combination of various herbs.
Storage
First and foremost, don't let it sit at room temperature for too long.
Transfer to an airtight container straight away. Seal well & keep in the fridge for up to 3 days.
Remember it will get more watery the longer you store it.
Serving


Tzatziki is SUCH a versatile dip - perhaps one of the most versatile ones!
Here are some ideas on how to serve it:
- Dip it in veggies (celery, pepper, carrot sticks, or my 10-minute tenderstem broccoli)
- Eat it by itself
- Serve it with bread (like this freshly made garlic herb bread or some yummy pretzels)
- Add a dollop to salads, burgers, and sandwiches
- Goes well with potato salad
- Use it on loaded fries
No Thermomix?
Here's how to make it without a TM (use the same measurements).
- Grate the cucumber and strain through a sieve to remove any excess water.
- Add thinly chopped dill and minced garlic to a bowl. Then add cucumber & the remaining ingredients.
- Mix with a spoon until well combined. Taste & adjust.
- Serve with extra olive oil & some more dill on top.

INGREDIENTS
- 320 g cucumber
- 8 g fresh dill or mint
- 2 cloves garlic
- 250 g Greek style yogurt I used Greek soy yogurt
- 1.5 tablespoon olive oil light or extra virgin
- 1 tablespoon lemon juice
- salt & pepper to taste
Toppings
- olive oil to taste
- fresh dill to taste
INSTRUCTIONS
- Place cucumber in your Thermomix bowl. Chop 5 seconds / Speed 5.320 g cucumber
- Remove cucumber from TM bowl and place into a sieve to drain excess water.
- Add herbs and garlic to a TM bowl. Chop for 4 seconds / Speed 5 (or longer if desired). Scrape down the sides of the bowl.8 g fresh dill, 2 cloves garlic
- Add the remaining ingredients. Mix for 4 seconds / Reverse / Speed 3.250 g Greek style yogurt, 1.5 tablespoon olive oil, 1 tablespoon lemon juice, salt & pepper
