    🥛 Ingredients

    Yup, all you need to make vegan quark are just 3 easy ingredients.

    Yogurt, lemon juice and vinegar on a small black cooling rack.

    Ingredient Details

    Plant-based yogurt - Try Alpro Plain vegan soy yogurt or any other plant-based alternative to yogurt. Avoid coconut yogurt due to its strong taste.

    Lemon juice - The best way to add an acidic element that you need to make quark. For best results, use freshly squeezed lemon juice.

    Apple cider vinegar - Gives it a subtle tartness. You can replace it with other types of vinegar too (like white wine vinegar).

    That's all! Let's take a look at what tools you will need.

    🥄 Equipment

    You will need:

    • A large glass or jar

    A pint glass, a mason jar, or a large pickle jar are my go-to choice.

    • A spoon

    To stir the ingredients.

    • Cheesecloth or a very thin linen cloth

    If you don't own a cheesecloth there's no need to buy it specifically for this recipe.

    Simply use very thin cotton or linen cloth that allows water to drip through it. If you hold the cloth firmly and pull it apart, you should be able to see through it. Don't use a coffee filter - it won't work.

    • A kitchen elastic

    To secure the cloth to your jar.

    In addition to that, I also recommend having a jar with a lid that you can use to store your vegan quark. Weck jars are great for this!

    ⏲️ Steps

    TIP - This is only a quick visual overview of how to make vegan quark. You'll find detailed steps and all the exact measurements in the recipe card at the bottom of this page.

    1. Add lemon juice and vinegar to your plant-based yogurt. Stir well.
    2. Grab a large jar.
    3. Line the jar with the cheesecloth, leaving some fabric to hang out at the sides.
    4. Use an elastic band to secure the cloth to the jar (as shown in photo 4).
    5. Simply pour your quark mixture through the cloth into the jar. The liquid will gradually collect in the jar. Cover it with a lid. If you don't have a lid just place a small plate on top.
    6. Leave it at room temperate for 10-15 minutes. Then place in the fridge for 6-8 hours, but best overnight.

    The water will drip from the cloth into the jar, creating a thicker quark layer on top.

    There should be a significant amount of liquid left at the bottom of the jar afterwards.

    If not, the quark isn't thick enough and you will need to wait a little bit longer.

    When you're ready to serve, spoon the quark into a bowl or a jar. Enjoy immediately or store in the fridge for later.

    💡 Expert Tips

    Be patient

    I am what some would call an impatient millennial so I completely understand the need for super-fast recipes. However, good things come to those who wait and you'll definitely want to wait with this one. The longer you wait, the thicker this quark gets.

    Choose your dairy-free yogurt wisely

    The final taste will depend heavily on what kind of yogurt you used. Make sure you love that yogurt itself or you might not like the quark.

    ❓FAQ

    Why doesn't my vegan quark thicken?

    When this happens, the issue usually lies in the cloth. You might be using a cloth so tight that it doesn't let through any water. This means your quark can't thicken and will retain the texture of the yogurt.

    Can you buy vegan quark in a store?

    Yes, you can buy Alpro Go On which is the closest quark substitute. It's a relatively new product so it might not be available worldwide just yet.

    🎂 Serving

    Quark can be used in ways similar to cottage cheese, cream cheese, or sour cream.

    Due to its lower fat content, it's often a great base for healthy desserts.

    You can whip it into cakes and other bakes, or use it in trifles, parfait, (baked or raw) cheesecakes, chia puddings, etc.

    The options are practically endless.

    I like to keep it super simple and serve it with fresh fruit, granola & some chia seeds.

    It can also be added to a variety of savory dishes, for example,

    • sandwiches, pasta recipes, salads, roasted veggies, pastries, etc.

    📦 Storing 

    I recommend enjoying this quark immediately, however, if you do want to store it for later, here's how to do it.

    • Place in an airtight container (like a jar or pickle jar)
    • Keep in the fridge and eat within 2-3 days.

    • 18 oz (500 g) plant-based yogurt 500g
    • 1 teaspoon apple cider vinegar
    • 1 teaspoon lemon juice

    INSTRUCTIONS

    • Add lemon juice and vinegar to your plant-based yogurt. Stir well.
      1 teaspoon apple cider vinegar, 1 teaspoon lemon juice, 18 oz plant-based yogurt
    • Line a large jar with the cheesecloth, leaving some fabric to hang out at the sides. Use an elastic band to secure the cloth to the jar.
    • Pour your quark mixture through the cloth into the jar. The liquid will gradually collect in the jar.
    • Cover it with a lid. If you don't have a lid just place a small plate on top.
    • Let stand at room temperate for 10-15 minutes.
